Notes

A day after primary fermentation has begun, bring a pint of water and a pound of honey to about 170F and hold for 10 minuets to pasteurize. Cool and then add to the fermenting wort. Once fermentation has finished, raise the temperature slightly for a couple more days. Then lager the beer for 2-6 weeks close to freezing. Add gelatin during lagering for a crystal clear finished beer.
